Cherry Cheese Blitzes

I thought this meal was so weird when I had it at John's when we were dating. But, now it is a house favorite.

*3 oz. soft cream cheese
*2 cups cottage cheese (small curd)
*2 TBS. softened butter
* 1/2 tsp. vanilla
Mix all of that together and put in the fridge.

*Crepes
*4 eggs
*2 1/4 cups milk
*1/4 cup melted butter
Mix all that together

Combine 2 cups flour and 1/4 tsp. salt. Slowly add to milk mixture. This needs to sit in the fridge for at least 1 hour.

Topping:
1 can of cherry pie filling
sour cream

Cook up crepes in a small omlette pan. Then add a spoonful or two of the filling. Wrap up the sides, top it with cherry pie filling, and put in the microwave for about 20-30 seconds. Pull out, add some sour cream on top and enjoy!

We usually eat this for dinner and the following morning cook up the rest of the batter and have it again for breakfast! Yummy!

Quesadilla Bread

SO MUCH BETTER THAN REGULAR CORNBREAD!

Cream: 1 cube of butter and 1 cup of sugar
Add:
2 eggs
1 cup milk
5-8 Tbs. of sour cream
2 cups Bisquick
1/4 cup parmesan cheese
6 TB. Cornmeal

Pour into a 9x13 pan, sprinkle sesame seeds on top and bake at 350 for 25-30 minutes.

S'more Gorp

The following four recipes are posted because our cute nephew needs to put on a little weight.

2 cups honey graham cereal
1 cup tiny marshmallows
1 cup peanuts
1/2 cup chocolate chips
1/2 raisins

In a medium paper sack or large plastic bag combine all ingredients and shake the bag well. (Obviously, your child's favorite part, because they can do it!) Store in a tightly covered container. Makes about 5 cups.

Mix and match your favorites for your family!

Peanut Butter Mustache Maker

*1 cup milk (or use 1/2 and 1/2 or cream)
* 2 TBS. creamy peanut butter
* 1 tsp. honey
*2 large marshmallows

In a sauce pan heat milk till tiny bubbles form around the edges. (DON'T BOIL) Pour into blender.
Add peanut butter and honey. Cover, blend till smooth.
Pour into cups and top with a marshmallow.

I usually add more peanut butter, and sometimes put a drizzle of chocolate over the top. We make this for the boys for a special treat when they have friends over.

Cinnamon Snails

*4 slices soft whole wheat bread
* 1/4 cup soft style cream cheese
*3 TBS. sugar
*1 1/2 tsp. ground cinnamon
*1/4 cup butter melted

Trim crusts off the bread. Spread cream cheese on each slice of bread.
Roll up bread slices with the cream cheese on the inside. Cut each roll into thirds.
Stir together sugar and cinnamon. Dip each roll into the melted butter and then roll in the sugar mixture. (Don't dip the ends of the rolls)
Place rolls, seam side down on ungreased baking sheet.
Bake at 350 for 10-12 minutes or till light brown and crisp.
Eat them warm or cool!

Honey Bees

These are a great way to give your kids a healthy and fun snack. When I babysat these were always a favorite!
*2 TBS. wheat germ
* 2 TBS. sesame seeds
* 1/3 cup powdered milk
* 1/2 creamy peanut butter
* 1-2 TBS. honey
* sliced almonds
*cocoa powder

Mix peanut butter and honey together. Add seeds, germ, milk. Chill for a half hour in fridge. Pull off nickel- quarter size pieces and shape into a bee shape. Place 1 sliced almond on the two long sides of your bee. Then dip a toothpick in water and dip into the cocoa. Last place your lines on your honeybee with the toothpick. I stick them back into the fridge for about twenty minutes. This usually makes about 30 bees.
Let your kids help with this one, it is a ton of fun! I will post a picture later!

Chicken Bola Gai

Great for Sunday dinner or company!
*1/3 c. flour
*salt
*1/2 tsp. celery salt, garlic and nutmeg
*2 lbs. chicken.
Combine flour and seasonings. Coat chicken and brown in butter.
Syrup:
*1 cup pineapple juice
*1/2 cup good soy sauce (not kikoman!)
*2 TBS. sugar
Mix and pour over chicken. Cover and bake 1 1/2 hours at 350 degrees. (9x13 pan) Serve with a seasoned rice and broccoli.

Penny Supper

One of my favorites from my childhood, and easy on the budget!

*6 all beef hot dogs thinly sliced
* 4 medium potatoes, cooked and diced
* 2 TBS. minced sauted onion
* 1/4 cup softened butter
* 1 tsp. mustard ( I prefer stone ground)
* 1 can cream of mushroom soup
* salt and pepper to taste

Combine all ingredients in a bowl and stir to coat. Pour into a greased 8x8 baking dish. Dot with a few hot dog slices on top and a 1/4 cup sharp shredded cheese. Cover and bake at 350 degrees for 25-30 minutes.
Serves 4-6
Great with green beans or corn. I also mix up baking powder biscuits to round out the meal.
